Easy Protein-Packed Breakfast Bagel
Who doesn’t love a good bagel?! My mouth is watering thinking about all of the delicious things you can stuff between bagel halves. BUT for this recipe, we’re focusing on an easy, everyday, protein-packed bagel to give you a beautiful (and much-needed) balance of protein, carbs, and fats to fuel you through your morning. Making time for breakfast in the morning is one of the ultimate self-care moves in my book, so I hope you make breakfast a priority to care for yourself well every day. We all need that nourishment first thing!
What You’ll Need:
1 everything bagel (or savory bagel), sliced in half
2 slices Canadian bacon
2 eggs
2-4 Tbsp cream cheese (regular or dairy free)
handful of greens (spinach, spring mix, etc.)
everything but the bagel seasoning (optional)
salt & pepper
olive oil
How to:
Heat a pan with a drizzle of olive oil over low-medium heat. Once the pan is heated, add your eggs.
“Scrambled” egg: whisk your egg in a bowl, add the egg to the pan and allow it cook without moving it around much. Add EBB, s&p as desired. You can push inward on the outside rim of the egg, allowing uncooked egg to fill the gaps to help it cook. You can either flip it or put a lid on top of your pan to cook the other side. Remove the egg once it is finished.
Over easy/sunny-side up eggs: crack your egg and add it to the pan (tip: crack it on a flat surface like the counter - not the edge of the pan. this will help prevent the shell breaking off in small pieces.) Add EBB, s&p as desired and allow to cook for a few minutes on one side until you can flip (for over easy). You can also add a lid instead of flipping or not flip at all for sunny-side up. Remove the egg once it is finished.
**for an egg like the one pictured, use the 2nd method & cook the egg until the yolk has a slight “give” when your push down on it a little with your spatula or your finger. The squishier, the runnier the egg with be!
Add the Canadian bacon to the pan and allow it to heat up for a couple minutes on each side (you can also add your Canadian bacon to the pan while your eggs are cooking if you are not doing “scrambled.”) While your Canadian bacon cooks, toast your bagel.
When the bagel is finished toasting, spread your cream cheese on one or both halves. You can add more cream cheese if you prefer- it should be enough to cover the bagel well. Add your Canadian bacon, eggs & lettuce to one half and top with the other.
Slice in half & enjoy! It is a little messy (as you can see by my cream-cheese-hand, but it’s worth it!)
