Cozy Turkey Croissant
Aren’t we all looking for a way to make lunch a little more interesting? I know when I pack my lunch for work, trying to make something quick at home, or looking for a easy soup pairing, a sandwich is perfect but can be soooo boring. I like to get creative to keep it interesting. Save this easy sandwich recipe to spice up your next lunch!
Makes 1 sandwich
Time: ~10 mins
Ingredients:
croissant, medium-large in size (you can also make minis, which would be cute but more effort)
few slices (~4-6) of deli turkey breast
1.5-2 slices white cheddar cheese
few thumb tips butter - softened enough to spread
few thumb tips of raspberry preserves or jam
~ 1/2 handful of spinach
drizzle of olive oil (for cooking)
How to:
Heat a pan over low-medium heat with a drizzle of olive oil.
Slice the croissant in half & spread raspberry jam on inside of one or both halves of the croissant.
Fold the cheese slices in halves and arrange them so they fit well on both sides of the croissant - it should be ~3 cheese halves on each croissant half. Layer turkey between the cheese and stack the sandwich together.
Spread a layer of butter on the top of the sandwich - this step is crucial because the butter will help your sandwich taste way better & prevent it from drying out! You gotta use that butter.
Place the sandwich in your heated pan butter side down and let it cook slowly until the cheese is melted (~4-5ish mins). You can press the sandwich down with the back of a spatula to help squish is together.
Spread a layer of butter on the side of the sandwich facing you & flip - repeating step 5.
After the cheese is melted on both sides, remove the sandwich from the heat. Open the sandwich and place your greens in middle. Re-stack the sandwich, cut in half & pair with soup, chips, fruit, veggies & dip - whatever your heart desires!
**if you’re packing the sandwich for your work lunch, pack your greens separate from the sandwich. You can pop the sandwich in the microwave or toaster oven at work for a few seconds then add the spinach. It’s not exactly the same but I’ve done it and it’s still tasty!
