Crazy Easy Enchiladas
I used to think enchiladas would be so difficult to make but, surprise, they're not. Of course, they're not authentic as an enchilada professional may make them but they're pretty dang good for the effort required in my opinion. If you are an enchilada professional, welcome - please send a taste test my way. This recipe serves 4!
What you’ll need:
1 lb ground turkey or beef
1/2 medium red onion, sliced
1 bell pepper, sliced
1 jar Trader Joes enchilada sauce or ~12 oz of any enchilada sauce
A 4 oz can green chilis
~10 small flour tortillas
1/2-1 cup Mexican Blend cheese
1/2 tsp cumin
1/2 chili powder
1 tsp garlic powder
Sprinkle of cayenne pepper or red pepper flakes to taste
Salt & pepper to taste
How to:
Preheat oven to 400F
Cook turkey on the stove top on medium heat until almost cooked through, about 8-10 mins
Add peppers, onions, seasonings and green chilis and cooked until veggies are tender, about 5-7 mins
Prepare a deep baking dish by spreading a thin layer of enchilada sauce over the inside bottom of the pan. This will help the tortillas stay rolled when you place them in the pan.
Add ~2 Tbsp of the turkey and veg mix into the middle of a tortilla, fold 1 side of the tortilla over then middle then the other side over the middle. Place the tortilla in the pan so that the folds are on the bottom in the enchilada sauce. Continue doing this until you run out of your turkey & veg mix
Top the rolled enchiladas with the remainder of enchilada sauce & cheese
Baked until the cheese is melted, ~10 minutes
Top with sour cream or plain greek yogurt and cilantro, maybe a lil hot sauce if you're feeling spicy
