Heirloom Summer Salsa
In general, I’m not much for recipe creation. Mostly because I’m the type of person that throws things together without measuring. The master of making something delicious when “we don’t have anything for dinner,” if you will. It’s super nice to be the recipient of this talent of mine, but it certainly doesn’t help me much in sharing recipes with others! I try to keep a log of the really good stuff though. I made this salsa on a whim using produce found at our local Farmers’ Market. I didn’t make it to share, but when my husband said, “Dang, that’s like really good!” I figured I would share the love. Plus it’s a super easy recipe and making things like salsa at home saves a grocery store container! Win, win, win! The catch - I highly recommend using heirloom tomatoes, it makes the flavor!
Ingredients
2 medium heirloom tomatoes, cut into wedges
½ medium red onion,chopped
¼ green bell pepper, chopped
1 medium jalapeno pepper, seeded and chopped
A generous handful of roughly chopped cilantro
Garlic powder, salt & pepper, to taste
Directions
Add the red onion, bell pepper, and jalapeno pepper to a food processor and process for a few seconds - until the vegetables are chopped into small pieces.
Remove the vegetables from the food processor. Add the tomatoes, garlic powder, salt, and pepper. Process the tomatoes until smooth, but slightly chunky.
Combine the red onion, bell pepper, jalapeno pepper, tomato mixture, and cilantro. Add additional garlic powder, pepper, salt, and cilantro to your desired taste.
Serve to the ones you love, store what’s left over in a reusable container! This makes about 1 liter of salsa, per my mason jar measurements.
