Avocado Chicken Salad

I love this recipe for quick, simple, delicious avocado chicken salad. It's perfect for summer, lunches & quick snacks.

What you'll need:

•1 12.5 oz white meat canned chicken (use shredded chicken if you’re feelin ambitious)

•1 whole ripe avocado

•1/4 c chopped bell pepper

•1/4 c chopped green or red onion

•1/4 tsp red pepper flakes

•1/4 tsp garlic powder

•salt & pepper to taste

•grated parmesan cheese

How to:

1. Drain chicken completely then add to a medium - large sized bowl

2. Add avocado & all spices to the bowl & mix until combined

3. Fold in peppers & onions

4. Top with parmesan & serve on a wrap, sandwich, with crackers etc - would also make a fab edition to charcuterie!

This recipe is best to enjoy immediately or to make at night and have for lunch the next day. It will not keep much longer as the avocado will begin to brown!
